What is HACCP?

HACCP is the state-of -the-art approach to consistent safe food production. It stands for Hazard Analysis and Critical Control Point (pronounced hass-ip).

HACCP is a proactive, prevention-oriented and based on sound science. The HACCP approach focuses on preventing or controlling food safety hazards that fall into three main categories: biological, chemical and physical. It focuses exclusively on product safety. 

Under a HACCP system, a “hazard analysis” is conducted to assess potential food safety hazards throughout the entire process for producing a given product. Then, “critical control points” (CCPs) are identified in the harvesting, production, processing and handling of food. At any CCP, a loss of control could result in an unacceptable food safety risk.

Companies following a HACCP system carefully monitor the identified CCPs to keep the process in check. Companies maintain records to track and document their safe food production monitoring efforts. These records can be checked by the government to verify that the company is carefully controlling its processes. 

By concentrating attention on key points that directly affect the safety of a product the consumer can be assured that the desired levels of safety have been met.

What is ISO 9000?

ISO 9000 is a series of international quality standards, the guiding principle of which is the prevention of defects through the planning and application of best practices at every stage of business - from design through to installation and servicing. These standards focus on identifying the basic disciplines and specifying the general criteria by which any organization, regardless of whether it is manufacturing or service oriented, can ensure that product leaving its facility meets the requirements of its customers. These standards ask a company to first document and implement its system for quality management, and then to verify, by means of an audit conducted by an independent accredited third party, the compliance of those systems to the requirements of the standards.
